Fresh Salmon-Cakes

These are flippin awesome.

Makes 12

Prep time: 20 minutes

Cooking time: 5-10 minutes

A fillet of fresh salmon, finely chopped by hand, creates a moist and flavorful cake.

We like to serve these on a bed of greens with Fresh Corn Salsa.

Although the recipe has a long ingredient list, the cakes are mixed in one bowl and can be assembled in minutes.

Ingredients;

2 eggs, lightly beaten.

1/2 c. reduced-fat mayonnaise.

1/4 c. diced red onion.

1/4 c. diced red bell pepper.

2 scallions, chopped.

3 cloves garlic, minced.

1 Tbls. chopped fresh parsley.

1 Tbls. chopped fresh basil.

1 Tbls. chopped fresh dill or 1 tsp. dried.

1 Tbls. fresh lemon juice.

2 tsp. Old Bay seasoning.

1 tsp. Tabasco sauce.

1/3 tsp. salt.

Freshly ground black pepper.

1 1/2 pounds salmon fillets, skin and bones removed, chopped by hand.

2 c. fresh whole wheat bread crumbs.

1-2 Tbls. olive oil.

Method;

Preheat your oven to 250ºF.

Line a baking sheet with foil and place in the oven to warm.

In a large bowl, combine the eggs, mayonnaise, onion, bell pepper, scallions, garlic, parsley, basil, dill, lemon juice, Old Bay seasoning, and Tabasco sauce.

Season with the salt and black pepper.

Mix well.

Gently fold in the salmon and 1/2 cup of the bread crumbs.

Be careful not to over mix.

The mixture should be very wet, with lumps of salmon.

Warm 1 tablespoon of the oil in a nonstick griddle or skillet.

Place the remaining 1 1/2 cup bread crumbs in a bowl.

Divide the salmon into 12 portions and form each portion into a loose cake.

Drop it into the bread crumbs and lightly coat both sides.

Shake off the excess crumbs.

Gently place each cake in the preheated pan.

Cook for 2 to 3 minutes on each side, or until lightly browned and cooked though.

Remove from the pan and place on the baking sheet in the oven to keep warm.

Repeat with the remaining cakes, adding the remaining 1 tablespoon oil if necessary.

These salmon-cakes are excellent!

Per cake: 138 calories, 10 g protein, 5 g carbohydrates, 8 g total fat, 64 mg cholesterol, 1 g dietary fiber, 223 mg sodium
