Roulades ~ Smoked Salmon and Capers
Like its fresh counterpart, smoked salmon provides omega-3
essential fatty acids that promote heart health.
Be sure to use an extra sharp knife to get clean slices.
With hors d'oeuvres or appetizers like these, attractive presentation is essential.
Ingredients;
8 oz. sliced smoked salmon.
4 oz. fat-free cream cheese, at room temperature.
2 Tbsp. capers, rinsed and chopped.
1/2 tsp freshly grated lemon zest.
Hors d'oeuvres Preparation;
1. Place 16" sheet of plastic wrap on clean work surface.
Arrange salmon slices, overlapping slightly, to make 13" x 9" rectangle.
Trim edges, if necessary, to make even rectangle.
2. Stir cream cheese in small bowl to make spreading easier.
Carefully spread cream cheese over salmon, leaving 1/4" border on long sides.
Sprinkle capers and lemon zest evenly over salmon and then sprinkle lightly with black pepper.
3. Using plastic wrap to help, lift one long end of salmon and roll over (without plastic) to form 13"-long cylinder.
Wrap tightly in plastic wrap and place in freezer 15 minutes, until firm.
4. When ready to serve, remove plastic wrap and slice salmon crosswise into 24 1/2"-thick slices.
Serve each slice on its side to showcase pinwheel effect.

Make Ahead: Skip freezer step and chill whole, wrapped roulade in refrigerator up to a day.
You can slice up to 8 hours before serving.
Cover and keep chilled until ready to serve.
