Pleasingly Peasant Soup
When I think of soup, I think of it as a comfort food.
It's warm, filling and in most cases, very good for you.
This Peasant soup definately comes under those categories...so satisfying!
Just the remedy for a cool, fall evening or a chilly winter tummy warmer.
Prep. Time: 15 minutes
Cooking Time: 15 minutes

Serves: 4
Ingredients;
3 c. vegetable stock.
1/2 lb. potatoes, peeled and sliced.
1/2 lb. carrots, peeled and julienned.
1 onion, sliced.
2 celery ribs, thinly sliced.
2 tsps. olive oil.
1/2 lb. spinach leaves, cooked, washed and torn into pieces, tough stems tossed away.
1/4 c. low fat or no fat sour cream.
1/2 c. plain croutons.
Instructions;
Combine first 6 ingredients in a heavy saucepan over medium high heat.
Season with sea salt and fresh black ground pepper to taste.
Bring to a boil.
Reduce heat to medium low.
Cover saucepan and simmer 10-15 minutes or until potatoes are tender.
Remove from heat.
Stir in spinach.
Working in batches if you need to, transfer mixture to a food processor or blender and purée.
Return puréed soup to saucepan.
Stir in low fat sour cream slowly 'til hot.
Serve soup with plain croutons.
A pleasant Peasant soup.
**** Remember - Flavored or seasoned croutons contain un-wanted fat!
