Lemony Soup
This soup is amazing because it's so easy, so delicious, and so low fat, low in calories.
Cooked, shredded lobster could be substituted instead of the crab.

Ingredients;
1-3/4 c. low fat, low salt chicken broth.
1 garlic clove, peeled and halved.
1 c. sliced shitake or button mushrooms.
1/2 c. thinly sliced fresh zucchini.
1-1/2 c. baby spinach leaves, packed.
6 oz. lump crab or lobster meat, picked over for shells, etc.
1/4 tsp. lemon zest.
1 Tbsp. fresh lemon juice.
Preparation;
In a medium saucepan combine the broth and garlic.
Cover and bring to a boil over high heat.
Add the shrooms and zucchini.
Reduce the heat to medium, cover, and simmer until the vegetables are tender, about 3 minutes.
Fold in the spinach and cook just until wilted, maybe 90 seconds or so.
Remove from the heat and stir in the crab, lemon zest, and juice.
Discard the garlic.
Serve immediately.
