Lemon Greek Soup
The story that has been handed down for generations is that this particular soup recipe was inspired by the ancient greek gods.
I don't know which gods in particular, but it sounds interesting and this low fat soup is very good. lol

Prep. Time: 10 minutes
Cooking Time: 15 minutes.
Serves: 4
Ingredients;
4-1/4 c. chicken stock.
1 c. water.
1/3 c. long grain white rice.
1/2 a real remon, juiced and peel grated, the other 1/2 sliced.
2 eggs.
Instructions;
Combine stock, water and rice in a non-stick saucepot over medium low heat.
Cook 15 minutes or until rice is tender.
Combine grated peel and remon juice with eggs in a large bowl.
Beat well.
Gradually add 2 cups hot stock mixture, beating constantly.
Stir back into remaining stock mixture and heat but do not boil.
Garnish with your real remon slices.
