Indian Curried Shrimp

Kebabs with Basmati Rice

An Indian Treat



Marilyn and I within just the last couple of years have been introduced to authentic Indian cuisine and do we love it!

Many dishes are chock full of healthy ingredients.

To get you on your way to discovering this wonderful cuisine we offer a very simple yet delicious dish.

Ingredients;

Start with,

1/2 c. basmati rice.

6 oz. peeled medium shrimp.

8 cherry tomatoes.

8 - 1" square pieces red onion (1 layer only).

1 tsp. curry paste.

1/2 Tbsp. extra-virgin olive oil.

2 skewers (soaked in water so as not to burn).

Preparation;

Preheat your grill to high heat.

While the grill is heating, cook the rice according to the directions on package.

Follow directions closely.

Then, in a medium bowl, combine your shrimp, tomatoes, onion, curry paste, and oil.

Skewer the shrimp, tomatoes, and onion, alternating each.

Turn your grill to low and place the skewers side by side across it.

Try to keep your skewers and the food from touching each other.

Grill the skewers for about 3 to 4 minutes per side, until the shrimp have turned pink.

Serve over the rice.

An excellent dish!

And for a very cool twist instead of, or as well, you could add or substitute an exotic meat from around the world.

A great way to think "outside-the-box" and broaden our horizons.
