Hot n' Sour Soup

Hot n' Sour Soup


This is a really simple, low fat recipe and if you like a little heat in your life...a very good one.

Preparation Time: 10 minutes.

Cooking Time: 25 minutes.

Serves: 6

Ingredients;

4 c. low or no salt, low fat chicken stock.

1/4 c. white vinegar.

2 Tbsps. lite soy sauce.

1 Tbsp. red pepper flakes.

2 tsps. sesame oil.

1 c. mushrooms, sliced.

1 c. fresh (garden) carrots, thinly sliced..

2 tsps. cornstarch, or arrowroot.

1 Tbsp. water.

Preparation;

In a stockpot combine the low fat stock, vinegar, soy sauce, red pepper flakes and sesame oil.

Bring to a boil, and then simmer for 10 minutes.

Add the mushrooms, carrots and simmer for 10 more minutes.

Combine the cornstarch or arrowroot with the water.

Add to the soup and continue to cook for 5 minutes, until it thickens.

Low Fat.
