Easy Chocolate Cake

Easy Chocolate Cake with Beets.
Don't be turned off by the beets because, trust me, you won't taste them what so ever.
In fact they make the cake wonderfully moist.
You'll find this an easy chocolate cake recipe, rich and chocolate decadence at its finest!
You'll be surprised at how light and not overly sweet it is and this allows the chocolate flavor to shine through.
You've gotta try it to believe me.
Ingredients;
1-3/4 c. all purpose flour.
1-1/2 tsp. baking soda.
1/4 tsp. salt.
1 can (15 0z.) whole or quartered beets, drained and save liquid.
1-1/4 c. granulated sugar or substitute.
1 c. canola oil.
1/2 c. juice from beets.
3 large eggs.
1 tsp. vanilla extract.
3 oz. melted un-sweetened chocolate.
1 c. semi-sweet chocolate chips
And for the icing
1 c. white chocolate chips.
Prep.
Preheat oven to 350F.
Put rack in center of oven.
Line a 9x13" baking pan with non-stick aluminum foil.
In a med. bowl, measuer the flour, baking soda
and salt.
Stir to combine and set aside.
Puree drained beets in food prcessor or blender.
Scrape into a large bowl.
Add sugar, canola oil and 1/2 cup reserved beet juice to the pureed beets and mix on medium speed until combined.
Add eggs and vanilla extract, blending until completely mixed together.
Add flour mixture to beet mixture and using medium speed,
mix well, at least two minutes and scraping down the sides often.
Add melted un-sweetened chocolate and combine well.
Pour into baking pan.
Distribute chocolate chips evenly over the top of the batter.
Bake 30-35 mins until toothpick inserted in center comes out clean.
Cool to room temp.
Make Icing;
Melt white chocolate chips in double boiler or microwave, being careful not to scorch.
Cool 'till just warm, yet still liquid.
Scrape into a zip-lock bag and squeeze the air out and seal bag.
Cut small piece from corner of bag and drizzle white chocolate in a zig-zag pattern evenly over the top of the cake.
Let stand till hardened.
An option to the chocolate icing might be to simply sift powdered sugar over top of cake.
