Crabmeat Soup

a Souper Low Fat Dish

Crabmeat Soup


This recipe will definitely impress.

You could even use lobster meat or virtually any seafood.

This is first class, five star cuisine!

Prep. Time: 10 minutes.

Cooking Time: 25 minutes.

Serves: 4

Ingredients;

3 Tbsp. unsalted butter.

1/2 c. onions, minced.

3 Tbsp. all purpose flour.

2 c. bottled clam juice.

1 tsp. lemon juice.

1/8 tsp. hot sauce or to taste.

2 c. low fat skim or 1% milk.

1 lb. lumped crustacean meat, thawed if frozen, picked over for shells, etc.

Directions;

Melt butter in a heavy saucepan over medium heat.

Sauté onion 5 minutes or until softened.

Stir in flour.

Cook 3-4 minutes or until mixture just begins to turn golden.

Whisk in remaining ingredients, (except meat).

Season with salt and pepper to taste.

Simmer 15-20 minutes, stirring occasionally.

Blend in meat and cook until mixture is heated throughout.
