Low fat, Thai Coconut Chicken Soup

Ingredients;
3 Tbsps. olive oil.
3 jalapeņo peppers, seeded and chopped.
3 habanera peppers, seeded and chopped.
3 fresh garlic cloves, minced.
3 Tbsps. freshly grated ginger root.
1/2 red bell pepper, chopped.
1/2 green bell pepper, chopped.
1 red onion, chopped.
3 c. low salt chicken stock.
3 c. co-co-nut milk.
1/2 lb. cooked skinless chicken breast, cut into small pieces.
1/2 lb. tofu, cut into small pieces.
1/4 c. low fat peanut butter.
2 Tbsps. Thai or other fish sauce.
2 Tbsps. brown sugar.
Preparation;
Place first 8 ingredients in a stock pot.
Simmer for 5 minutes.
Add low fat chicken stock and co-co-nut milk.
Simmer for about 10 minutes.
Add the chicken, tofu, low fat peanut butter, fish sauce, and brown sugar.
Simmer for 10 more minutes.
Let cool before serving and enjoy knowing it's low fat!
