Chicken-Strips Indonesian Coconut-Crusted

Serves 4

Prep time: 10 minutes

Baking time: 15 minutes

These chicken tenders or strips will please any adult palate, yet kids will love them, too.

To complete the Indonesian theme, serve with Peanut Dipping Sauce, recipe below.

Ingredients;

1 1/2 c. packed coconut flakes, lightly chopped.

1 lb. boneless, skinless chicken breast, sliced into tenders, nuggets or strips.

Salt.

Freshly ground black pepper.

1 egg white, lightly beaten.

Method;

Preheat oven to 325ºF. Line a baking sheet with foil.

Sprinkle the coconut onto the baking sheet and spread in a thin layer.

Bake for 5 to 7 minutes, or until just beginning to turn golden brown.

Transfer to a shallow bowl.

Increase oven temperature to 450ºF.

Coat a 9" x 13" baking pan with cooking spray.

Place the chicken between 2 sheets of plastic wrap and gently pound to 1/4" to 1/2" thickness.

Season with the salt and pepper.

Dip each piece of chicken in the egg white to moisten well.

Press into the coconut and turn to coat both sides.

Place the chicken in the prepared baking pan and lightly coast with cooking spray.

Bake for 15 minutes, or until cooked through.

Per serving: 361 calories, 30 g protein, 20 g carbohydrates, 18 g total fat, 66 mg cholesterol, 3 g dietary fiber, 237 mg sodium

Peanut Dipping Sauce

This sauce is phenominal with the chicken-strips.


Makes 4 servings (1/2 cup)

Prep time: 10 minutes

You can make this sauce as mild or as spicy as you like by varying the amount of chili puree you use.

Ingredients;

3 Tbls. fat-free chicken broth.

2 Tbls. natural peanut butter.

1 Tbls. toasted sesame oil.

1 Tbls. reduced-sodium soy sauce.

2 tsp. lime juice.

1-2 tsp. chili puree with garlic.

1 tsp. honey or sugar.

Salt.

Freshly ground black pepper.

In a small processor or blender, combine the broth, peanut butter, oil, soy sauce, lime juice, chili puree, and honey or sugar.

Puree until smooth and creamy.

Season to taste with the salt and pepper.

Now, just dip your chicken-strips in this sauce and enjoy!!!

Per serving: 89 calories, 2 g protein, 4 g carbohydrates, 8 g total fat, 0 mg cholesterol, 1 g dietary fiber, 209 mg sodium
