Grilled-Organic-Vegetables with Mint
Yup, grilling again! lol
This is a superb accompanyment with any main course!
Serves 6
Skill Set; Easy
Total Time 20 mins.
Ingredients;
2 cobs of corn shucked.
2 c. sugar snap or snow peas.
1 c. organic zucchini, sliced.
1 c. cut org. baby carrots.
1 c. org. whole mushrooms.
1/4 c. 100% pure sunflower oil.
2 tbsp. fresh mint chopped.
2 tbsp. red wine vinegar.
sea salt and fresh ground pepper to taste.
Preparation;
Pre-soak shucked corn for 15 mins.
In a bowl of fresh water.
Pre-heat bbq to med heat and put cobs on grill turning every min for 5 mins.
Remove corn from grill.
When cool take a sharp knife and shave corn from cob.
Place kernels in large serving bowl and set aside.
Put all veggies in a bowl and lightly coat with oil.
Place veggies in a grilling basket and place on grill.
Close lid and and grill for about 5 mins.
Yes, you have time to get a glass of wine.
Open lid and turn veggies and grill for another 6-7 mins.
When done add these veggies to corn in the serving bowl.
Add mint, red wine vinegar, sea salt and fresh ground pepper and serve.
This recipe can be made ahead of time and refrigerated for up to a day before serving.
