Pair it with another salad or two and some fresh crusty rolls.

This salad comes together in just a few minutes.

But makes an impression that lasts.

This recipe calls for fresh lumped meat.

Of course that would taste best, but it is a little more pricey.

Feel free to substitute if you wish.

Any kind of seafood salad like this is also great for picnics and the buffet table.

We like to serve it in small tomatoes that have been hollowed out and a spoonful placed inside.

It makes a beautiful presentation and always seems to disappear quickly.

It is not just a summer salad recipe.

It's great served in larger tomatoes or on a Butter lettuce leaf.

This crab-salad recipe can be substituted with lobster meat, scallops or even imitation seafood meat.

Serves: 4


8 oz. lump crab meat, picked over for shells

4 Baseball sized tomatoes, hollowed out

1/4 c. low-fat mayonnaise

2 tsp. finely grated lemon zest

2 tsp. freshly squeezed lemon juice

1 stalk celery, finely diced

1 spring onion or scallion, finely chopped

1 tsp. Old Bay Seasoning

A dash Worcestershire sauce

1/2 tsp. hot sauce, such as Tabasco or chili sauce.


Gently combine all ingredients until well-mixed.

Lastly, spoon the mixture into each tomato and serve chilled.

* Imitation seafood meat is usually made from cod.

** This recipe is excellent as a filling for Pita's or wraps.
