Waldorfsalad with Lime ~ Super Salads

According to the American Century Cookbook, the first Waldorf Salad was created in New York City in 1893, by Oscar Tschirky, the maître d'hôtel of the Waldorf Astoria.

The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise.

Chopped walnuts were added later to this now American classic.

Some prefer their Waldorf salad made with yogurt, instead of mayo.

Having had this salad both ways, I fall firmly in the mayonnaise camp.

But feel free to substitute yogurt for the mayo if you like.

This fruity, yet nutty salad, really is a super natural delight.

Really, it's very good, very refreshing!

In fact, it's one of Jennifer Aniston's faves.

Courtney and Jennifer enjoyed this salad for years when working on the set of Friends.

The pears and apples are such a great combination.

Ingredients:

1/2 c. water.

2 Tbs. Lemon juice.

2 cored and cut in half firm ripe Bosch or Anjou pears.

2 cored and cut in 1/2 inch pieces celery stalks.

2 tart green apples cut lengthwise and then in 1/2 inch pieces.

2 peeled and cut in 1/4-in diced carrots.

1 c. Walnut halves.

1 c. Golden raisins.

Lime mayonnaise.

1 Tbs. chopped fresh mint.

2 Tbs. Sunflower seeds.

Preparation;

Mix water and lemon juice in a large bowl.

Toss in pears and apples and let rest for 10 minutes.

This will prevent discoloration.

Drain the fruits, discarding liquid, pat dry and return them to bowl.

Add celery, carrots, walnuts and raisins.

Toss with lime mayonnaise.

Cover and refrigerate for 1 hour.

Before serving, mix well and sprinkle top with mint and sunflower seeds.

Yields: 1
