Vegetable Chowder ~ Super Soups

This soup is soooo chunky and soooo hearty, warm and comforting, you'll be tempted to use a fork, but please, use a spoon because we know you'll want to get every last drop and every last morsel.

This chunky vegetable soup is thick with potatoes, pumpkin, and corn.

You won't miss the meat in this hearty stew-like meal... we make this super-easy soup about every other week.

It's thick and hearty, almost like a stew.

Serve this chowder with a whole grain crusty roll and it's a hearty meal on any cold winter's eve.

That’s what this winter vegetable chowder is all about.

Corn, leeks, and carrots give this hearty soup its fresh, summery flavor.

Make a large batch now and then freeze for up to six months.

If you do plan to freeze the soup, cook the corn for a few minutes less than called for as this will help them retain their crunch after the soup is reheated.

Makes: 4 servings

Preparation Time: 20 mins

Cooking Time: 25 mins

Ingredients:

1 large potato, cubed

2 c. pumpkin, cubed.

2 veggie stock cube.

3 c. water.

2 Tbs. smoke flavored textured soy bits.

1 Tbs. margarine (sodium-free).

2 Tbs. flour.

2 c. soy drink.

15 oz. canned corn kernels, drained.

1 lb. leeks, sliced.

2 large carrots, cut into 1 inch julienne strips.

Preparation;

Place leeks, potato, carrots, pumpkin, stock cube and water into a large saucepan.

Cover; bring mixture to boil, then simmer for 20 minutes.

Add corn and soy bits.

Remove from heat.

Melt margarine in a medium saucepan (or microwave on High 100% for 1 minute).

Add flour then cook or microwave for 1 minute.

Remove from heat and gradually add soy.

Return to heat, stirring continuously until mixture thickens.

Season with sea salt.

Stir white sauce into mixture and heat through.

Variations:

Frankly, you can add virtually any type of vegetables you want to this chowder and it will still be awesome.

Add a crusty loaf of sourdough and a simply dressed green salad for a more-than-satisfying lunch or dinner.
