Raspberry Vinaigrette ~ Super Salads

This is oh so flavorful and we know how wonderful berries are.

Your taste buds will get up and dance in your mouth.

I'm not kidding!

Simple to make and when raspberries are in season there is simply no excuse.

Make up a batch to keep in fridge for a week.

This is an awesome vinaigrette that you'll want to splash on all your salads and veggies, in fact you'll probably come up with ideas of your own.

Vibrant and colorful, it's a great choice to serve on a nutty or fruity salad.

Toss a handful of cranberries, pinenuts or walnuts on your salad along with this salad dressing for a sweet treat.

You could even use it as a dip with balsamic vinegar and a nice crusty bread or sourdough bread would be great!

Ingredients:

6 c. fresh, rinsed baby spinach greens.

1/2 c. goat cheese, crumbled.

1 pint fresh berries.

1/4 c. sliced almonds.

2 c. extra virgin olive oil (EVOO).

2 cloves garlic, minced.

2/3 c. rasp(berry) vinegar.

1 tsp. dry mustard.

1 Tbs. shallots, finely chopped.

Sea salt and fresh ground pepper to taste.

Preparation;

Combine the spinach, goat cheese, berries and almonds in a large bowl.

In a cruet, combine the olive oil, garlic, vinegar, dry mustard, shallots, salt and pepper and shake well.

Pour delicately over the salad for a spectacular presentation and taste sensation!

Goat cheese is better for you than most other cheeses so you're already ahead of the game with this recipe.

Remember to try this using your imagination, we've had great results using it as a dip for shrimps and prawns as an example.

The berries do add some sugar to the dressing, but not enough to worry about.

I might consider trying this raspberry vinaigrette on my scrambled eggs next.
