Classic Minestrone Soup

Classic Minestrone Soup ~ Super Soups

This is certainly one of our favorite go-to winter soups!

It's a hearty and nourishing soup made with some incredibly healthy vegetables.

It cooks up relatively quickly (especially if you opt to use canned beans in place of dried) and is one of those dishes that will taste better with each reheating.

You can even easily freeze any leftovers.

The word "minestrone" does not refer to any specific soup recipe; it's more of a generic term, translating literally as "big soup," which can be made of any assortment of ingredients, but often containing a mixture of vegetables and beans.

Come home to this hearty Italian soup simmering in your crock pot.

This well-rounded meal is low on calories and fat.

Canned beans and frozen spinach add convenience, along with fiber and protein.

This famous Italian soup has been much imitated around the world with very differing results.

The homemade version is a delicious revelation and is also extremely healthy, as it has pasta, beans and lot's of fresh vegetables.

If you can, try to make the soup a day early and refrigerate as this co-mingles and improves the flavors.
