Banana, Apricot with Egg

Banana-Apricot Egg Crepes
Another excellent
breakfast
or brunch recipe!
Ingredients;
1/4 c. low fat cottage cheese.
2 tbsp. low sugar
apricot
spread.
1/2 c. sliced banana.
2 large eggs.
2 tsp. sugar.
Olive oil spray.
2 slices whole grain bread.
Preparation;
1. Mix cottage cheese, apricot spread and
banana
together.
Set aside.
2. Break eggs into a small bowl and add sugar.
Whisk with a fork.
3. Coat a medium size non-stick skillet with olive oil spray and place over medium high heat.
Pour half the eggs into the skillet.
Rotate the skillet to spread the eggs into a thin layer.
Let cook 2 minutes.
Turn over for 1 minute.
Remove from heat to a plate.
4. Repeat with remaining egg mixture.
Divide cottage cheese mixture and place half in the center of each.
Fold up lengthwise to make a roll.
Makes 2 Servings.
Per Serving: 324 cal, 20 g pro, 39 g carb, 10 g fat, 3 g sat fat, 220 mg chol, 3 g fiber, 553 mg sodium.
Really good and only ten grams of fat.
Not bad!
