Chopped-Chicken-Salad with Apples and Walnuts

This salad provides a generous portion of fiber-filled vegetables and protein-rich chicken, plus the added benefit of omega-3-packed walnuts.

Very filling meal.

Ingredients:

1-2 c. chopped romaine lettuce.

4-5 oz. chicken breast, cooked, cooled, and chopped.

1/2 c. canned chickpeas, rinsed and drained.

1/2 med. Granny Smith apple, chopped.

1/4 c. chopped cucumber (with peel).

1/4 c. chopped tomato.

1/4 c. chopped avocado.

1/4 c. chopped celery.

2 scallions, minced.

1 Tbs. chopped walnuts.

2 Tbs. reduced-calorie raspberry vinaigrette. (

Preparation;

1. Place lettuce in large bowl.

Add chicken, chickpeas, apple, cucumber, tomato, avocado, celery, scallions, and walnuts.

Drizzle with vinaigrette and toss to coat.

Makes 1 Serving of chopped-chicken-salad.

Per Serving: 459 cal, 36 g pro, 45 g carb, 17 g fat, 2 g sat fat, 66 mg chol, 14 g fiber, 653 mg sodium.
