Chicken, Black Bean & Barley Soup

Mmmmmmmmm, mmmmmmmmm, good for you!

This is an awesome dish, I mean just check out the ingredients.

Prep. Time: 15 minutes

Marinade Time: 1 hour

Cooking Time: 1 hour, 30 minutes

Serves: 4

Ingredients;

1 c. dried black beans.

4 chicken legs, thighs and drumsticks - skin REMOVED.

1 onion, cooked, quartered.

2 celery ribs, chopped.

1/2 c. barley.

1/2 tsp. dry mustard.

1/8 tsp. cayenne pepper.

Instructions;

Cover beans with water in a saucepan.

Bring to a boil and cook 3 minutes.

Remove from heat, cover, and let stand for 1 hour.

Return pan to medium heat and add the legs, thighs, drumsticks, onion, and celery.

Cook 1 hour.

Remove all the meat and bones from soup.

Add barley and season with pepper to taste, mustard, and cayenne.

Cook 30 minutes, until beans and barley are tender.

Remove meat from the bones and shred.

Return meat to soup.

Season with sea salt to taste.

Low fat.
