Sweet Carrot Soup

This soup recipe is very simple, yet delicious.

And...a virtual, no fat recipe.

We all know that these orange, garden delectables, are good for your eyes.

And once again if you have these root vegetables in your own garden, it doesn't get much better than fresh picked, home grown.

Prep. Time: 15 minutes.

Cooking Time: 15 minutes.

Serves: 4

Ingredients;

3/4 lb. carrots, cooked, peeled and cut into julienne slices.

1-1/2 c. orange juice.

1 c. apricot nectar.

1/4 c. lemon juice.

Preparation;

Place the root veggies in a steamer basket over boiling water.

Cover saucepan and steam 10-15 minutes or until they are very tender.

Careful because you don't want them mushy, just tender.

Transfer veggies to a blender.

Add remaining ingredients and purée.

Serve soup chilled or at room temperature.

Virtually no fat!
