Natures best veggie stock. I have to admit, I was somewhat surprised with the amount of email we got asking how to make a good, low fat, veggie broth or stock. So, without further ado, below is one of our best recipes. Rating ***** Prep. Time: 15 minutes. Cooking Time: 2 hours. Serves: 10.
Ingredients; 4-1/4 c. water. 1 large onion, cut into pieces. 2 large carrots, peeled and sliced. 4 celery ribs, with leaves, cut into large pieces. 2 tomatoes, halved. 3/4 lb. cabbage, cut into pieces. 1 piece fresh ginger root, 3 inch, coarsely chopped. 6 mushrooms, halved. 6 cloves garlic. 8 sprigs parsley. 5 whole black peppercorns. 5 whole cloves. 1 large bay leaf. Instructions; Put all ingredients and salt to taste in a large pot and bring to a boil. Reduce heat to low and simmer about 2 hours. Strain through cheesecloth and save or serve any way you like. Very Low Fat! You'll want to keep some in your freezer at all times.
