Natures best veggie stock. I have to admit, I was somewhat surprised with the amount of email we got asking how to make a good, low fat, veggie broth or stock. We would recommend freezing for later use, the amount left over from the recipe. So, without further ado, below is one of our best recipes. Rating; Really good. Prep. Time: 15 minutes. Cooking Time: 2 hours. Serves: 10.
Ingredients: 4-1/4 c. water. 1 large onion, cut into pieces. 2 large carrots, peeled and sliced. 4 celery ribs, with leaves, cut into large pieces. 2 tomatoes, halved. 3/4 lb. cabbage, cut into pieces. 1 piece fresh ginger root, 3 inch, coarsely chopped. 6 mushrooms, halved. 6 cloves garlic. 8 sprigs parsley. 5 whole black peppercorns. 5 whole cloves. 1 large bay leaf. Sea salt to taste. Preparation; Put all ingredients and sea salt to taste in a large pot and bring to a boil. Reduce heat to low and simmer about 2 hours. Strain through cheesecloth and save (freeze) or utilize and serve any way you like. Very Low Fat! You'll want to keep some in your freezer at all times for varying stocks, rues and gravy's.
