Chilled Blueberry Soup



This is a sensational souper soup recipe.

If you want healthy anti-oxidants in your life, this fruit soup will give it to you.

Preparation Time: 10 minutes.

Ingredients;

1-1/2 c. fresh blueberries, picked over and chilled, or 12 oz. frozen, thawed and drained.

1/2 c. seedless white grapes, well chilled.

1/2 c. low fat or non fat sour cream, well chilled.

2 tsps. fresh lemon juice.

1 Tbsp. sugar or Splenda, or to taste.

1/2 c. seltzer or club soda, well chilled.

Instructions;

Purée blueberries and grapes in a food processor or blender.

Strain through a sieve into a bowl, pushing hard on the solids.

Extract as much juice as possible and discard solids.

Whisk sour cream, lemon juice and sugar into juice.

Stir in seltzer or soda and serve.

Very low fat!
