Cucumber & Sesame Seed Salad
Crisp, juicy, pungent garlic, earthy sesame oil, a flourish of seeds reinforce the flavor and add a textural counterpoint.
3 cucumbers, (We prefer long English cukes)
1 Tbs. sesame seeds, toasted
2 tsp. sesame oil
1 or 2 tsp. white vinegar
1 tsp. sugar
garlic cloves, crushed
Wash cucumbers well, cut into 1" chunks.
Set aside to rest.
Meanwhile prepare the dressing.
Mix oil, sugar and vinegar together until sugar dissolves.
Taste and adjust to your liking.
Drain liquid from cucumbers.
Mix through as much crushed garlic as you like (for us it's, the more the merrier), then coat with the dressing.
